RTL Biathlon 2007 is a simulation of the winter biathlon sport, combining two disciplines: cross-country skiing and rifle shooting. The competition takes place on nine skiing areas. The skier moves forward by keeping a button pressed, which consumes energy. The amount of energy varies in different sections of the level (more when going downhill, less when going up), and releasing the button allows for some regeneration, while the skier will move slower.
The gameplay requires strategy as players need to manage their energy levels carefully. Overexerting the athlete leads to a loss of stamina, while techniques like gliding and sprinting can be used to conserve energy. The shooting sections are shown from a first-person perspective, where accuracy depends on the remaining stamina. Players can also hold their breath to steady the rifle, but this depletes the stamina levels further.
The game features different modes, including Practice, Career, and Multiplayer. In Career mode, players earn experience points that unlock new skills. The game allows for customization of skiers, choosing from preset characters or creating custom ones. Multiplayer is available for up to four players in hot seat mode or two in split-screen.
